You can't find package in the profiles because it's a lifecycle phase of maven.

It is the phase in which maven packages all compiled code into a jar (if your interested in more see http://maven.apache.org/guides/introduction/introduction-to-the-lifecycle.html )

If I have time i'll take a look to the readme and see if I can add more info.

I tried it and it worked for me.
I'm wondering why:

https://itextrups.svn.sourceforge.net/svnroot/itextrups/tags/rups-1.0.0/readme.txt

didn't mention that method.  It just listed the exe and all profiles.
I'm guessing package is another profile; however, I could not find
such a profile in the pom.xml file:

https://itextrups.svn.sourceforge.net/svnroot/itextrups/tags/rups-1.0.0/pom.xml

I'm unfamiliar with maven; hence, I guess the package profile is
included automatically from somewhere else.

BTW, I managed to get the untagged rups to work by modifying
the pom.xml so that the dependency was on:

   <version>5.1.4-SNAPSHOT</version>

instead of:

   <version>5.2.1-SNAPSHOT</version>

that worked; however, your `mvn package` method is obviously easier.
