I think there's a typo in your mail. Did you mean chapter 8, or are we talking about a different site?Filling out XFA forms is explained in chapter 8, but as you can read: the 'core' iText can't flatten an XFA form that is filled out.
If you want to flatten an XFA document that is filled out, you need XFA Worker. That product is currently only available for paying customers because it's under development. You can try the current state of the project here: http://demo.itextsupport.com/xfademo/
