At first, there is no mention of LTV whatsoever.
At first sight, I thought it was because the certificate was 
self-signed, so I added it to the Trusted Identities.
After doing so, the document was LTV-enabled.

Now that you've specified which PDF on the screen shot is causing 
problems, I've taken a closer look at the certificate.
It's not self-signed, it's issued by CA SINPE - PERSONA FISICA.
However: the certificate chain you embedded in the PDF when signing it 
with PDF is wrong.
It doesn't chain up correctly.
