The UI ie expected the output to to be transformed to 90 degrees and the resolution to be full HD. Both of these can be set in the weston.ini [output] section for whatever output the kernel is delivering via kms. hmm... i see how you disabled the transform, but i think the reason the UI is unusable was the resolution. For some reason that monitor is advertising that extremely low resolution as the advised default and the weston.ini isn't explicitly setting anything different. Note that you can see the various modes discovered by wayland via the journal, just log in as root (either ssh in or switch to a virtual console) and run 'journalctl|grep weston|grep mode'.
