Well, the mysterious channel stickiness disappeared when I booted. Now I'm getting the same results I've always gotten.
I noticed that when I "make install" the new driver that it's actually putting everything in /lib/modules/2.6.15-1-486-1-486/ivtv instead of /lib/modules/2.6.15-1-486/ivtv. I copied everything from the former into the latter, but that didn't seem to help.
