Input and output are totally independent on a PVR-350, so no problem at
all to record something and to display something else simultaneously.

Sounds like your problem is more like a cabling issue and that you'll need
to make your own cable if you want to connect a scart cable to video-in
and at the same time connect s-video out to something else...
