After some further investigation;

If I do;

cat /dev/video32 > somefile
for like ... 10 seconds or so, then run your suggested command on that
file - the quality of the stream is perfect.

But if I just run the mplayer-command directly on /dev/video32, things
does not look any pretty.

I can also see errors in dmesg repeatedly;

ivtv0: All encoder YUV stream buffers are full. Dropping data.
ivtv0: Cause: the application is not reading fast enough.
