I've had problems with MythTv period. with my HVR-1600, and opted for
using VLC media player. I'm running Ubuntu Linux(7.10 Amd64).

This maybe a crazy question but have you tried just doing a command like
this in a terminal before performing the cat /dev/video0 > test.mpg:

ivtv-tune -c 6

That way you'll see whether you've tuned it to channel 6?
