Multiple smtpservers instances? [Is there an AVALON DOCTOR in the house?]

What would it to configure more than one SMTP server to run concurrently,
each on a different bind address?  Right now it is an all or 1 policy, and I
would like to listen on specific addresses (specifically, localhost and the
MX record).
