Ive been running orion server (java-based webserver) on redhat 7.1 with the
sun 1.3.1 jdk for many months, no problems.

You didn't mention what version of RedHat 7.0 or 7.1
There is information on Sun's site that I was looking at a couple
of days ago about JDK support. RedHat 6.0 is officially supported.
Redhat 7.0 has known issues similar to what you are describing
with the JDK. The recomendation (from sun) is to go to RedHat 7.1.
I have been running java related stuff (not james) on RedHat 7.1 for
several days now without issue.
