I have only seen something resembling this twice (the only two times I
have seen Linux crash).
first was a scsi disk failure, look for clues in the system logs
second was running out of file descriptors system-wide and while the
existing
processes were running running okay, no new processes could do much
of anything, and you could't log in on the system console. The system
logs may help you here as well.
I have been using a similar config to yours (with various versions of
Apache & Jserv on RH5.2 & 6.0 over the last couple of years without any
problems.
