Assume that you have everything installed in /usr/local/stronghold

cp -r /usr/local/stronghold /usr/local/stronghold-testing

vi /usr/local/stronghold-testing/conf/*.conf

change the port numbers.
change the documentroot and other paths that reference the old path.

you are now done.
