I second the "Red Book" recommendation. It's a must-have for any OpenGL programmer.
Jogl has the basically the same interface has OpenGL (static GL class that contains the GL methods). So, any OpenGL reading that you do will be applicable to Jogl and OpenGL code is easily portable to Jogl (after figuring out the windowing framework).
