I read a pretty good opinion the other day where they said that Amazon (and Sony and B&N and all the other guys) want to emulate paper books, hence the eInk display. Apple wants to re-invent books as multimedia experiences with animation and video and audio and Internet integration (just think about school or college textbooks..), hence the LCD the iPhone OS behind it.
