Making money selling iphone/itouch/ipad apps is the geek equivalent to
winning the lottery. Most developers are not even going to break even
on their efforts expended. Others will make enough to buy their lunch
each week. A few folks out of 200,000 apps will make it big.

Apple does well by getting a cut off all the action. What is lunch
money to a single developer is significant money to Apple when
aggregated across all the developers. Not that I've ever been one for
socialist/radical causes, but this does rather smack of out right
exploitation of the masses. Others, though, will counter that its no
more morally questionable than the many state governments that these
days use a lottery to bilk the lower middle class and working poor in
a form of taxation.
