Here's a more general intro to programming that uses Java and that is
available in PDF form (minus exercise answers, etc). I have no
experience with this, I just found it while looking for relevant PDFs:

I can also confirm that Java EE is not a superset of SE, it's a large
layer of stuff that uses SE as its infrastructure layer.
