So much depends on the construction of the pdf document itself - whether it was tagged or not, or whether accessibility was taken into consideration when the document was being designed. Most pdf documents (which are not themselves scanned images of original documents), should read fine with version 8 of Adobe Reader and JAWS8, with little or no further adjustment being necessary. It is usually possible to export to text, though depending on whether the document author has allowed it or not. However, if the pdf's are scanned images it is necessary to use an OCR program - not a screenreader - to recognise and read them.
