Considering this is a new problem and that nothing seems to explain it except possibly a recent OS update, I'd do a repair on Office 2007. It's a simple operation, which I can explain if you'd like.

If you have this turned on in Outlook 2007 as this is an issue in Outlook 2010. When you have this turn on and make a spelling error in Outlook 2010 it crashes Outlook 2010 which I assume might be what is happening in Outlook 2007.
