Two-part answer. First, you'll find color options in the font dialog, which you 
get to with either control-shift-f or control-d. both work.

Second, I've noticed the same unlikely color scheme is shown in my Word 2016 
documents, but what is being printed is black on white. I keep meaning to find 
out why this is, but I keep forgetting to.
