I've done a few easies, for which I copied the original unsolved Ppuzzles to notepad, and then went along and where the dashes are is where the missing numbers go. I also have a BrailleNote as a refreshable braille display. I eliminate spaces except where they are between puzzles. Thus, we also follow the rules in the execution, and make erasures where a wrong guess was made and then type corrections. Other folk use invented solutions such as adapted boards or purchase Sudoku boards - looking to sources like APH or NFB. It is indeed possible to use Excel - as a sort of list of the numbers and dashes, one per each cell, copy and paste how you may, perhaps insert tabs and down-arrow, substituting the dashes with appropriate numbers as you progress the solution.
