I have another one that may help, I'll install the assistant in a sandbox. It won't show me the registry entries, but it will show me all the files that get installed and where they are. With that, after uninstalling, you can manually go around and delete anything the uninstall left behind.

But from the control panel, those components aren't in use so your choice to disable the add on doesn't get over written. Before uninstalling it, go to the control panel, then to internet options, then to the programs tab, then to the add ons manager. In the manager, locate the Amazon Assistant in the list of add ons, and disable it, then exit out of the manager and internet options. Then try uninstalling it.
