Becky,
You may have a menu option in Word, in the files menu, to scan in Openbook.
This will Open up Openbook, and though I haven't tried it, you may default 
to saving in Word, making it easier to read as a .doc file, rather than a 
.ark file.

Hey Guys,

I have heard several of you in the past talk about reading your snail mail
with JAWS.  I finally
figured out how to do it.  All I have to do is scan a letter of whatever
piece of mail that I am
reading into a Microsoft Word Document.  Once I have it in a Word Document,
JAWS reads it just fine.
This has really opened up many new possibilities for me.  Thanks to all of
you for all the help and
advice that you have given to me concerning this topic.
