IMO choosing an 'official' client is near impossible. It would also invalidate the whole idea behind Jabber. But with the compliance program it should be possible to point out several 'sanctioned' clients.

While choosing an 'official' client would be counter to the Jabber philosophy, it would be a good idea to recommend a client with a similar UI to each of the legacy IM systems. For example, JAJC closely mimics the ICQ UI, and so would be a good place to point former ICQ users.
