Hi, I don't use Mac, but I'm pretty sure I already heard of builds of (more) recent JDK on that platform. See http://javaevangelist.blogspot.fr/2012/02/openjdk-7-on-apple-g5-powerpc-on-mac-os.html for example.
Maybe people here on this list can confirm it? This way, you'd be able to run Jenkins with the right JDK while keeping your builds with JDK5 or JDK6 or even JDK4 if you will.
