This already exists: Plugins can contribute whatever they want to the job environment. They can also add snippets to the env-vars.html page by providing a buildEnv page.
So please file an enhancement request to the respective plugins that provide variables without documenting them.
For now, just check the documentation of the plugin and/or run set (Windows) or env (Linux) to find out what environment variables get contributed to the build.
