This should be easy to turn into a crockpot meal for days of heavy duty cleaning. I haven't tried it, but it sounds good.

* QUICKIE CHICKY SOUP
Place in a stock pot and bring to a heavy simmer:
1-2 quarts of chicken stock
2-3 bay leaves
2 C. dry white wine
salt and pepper
Add the following in order:
5-6 stalks of celery, 1/4" slices
1/2 small bag of baby carrots, chopped each in half or
thirds
2 medium onions, rough chopped
2-3 potatoes, peeled and diced
Don't boil or it will create foam...bad idea. Keep at a
medium simmer until you can just barely pierce the
potatoes
with a fork. Turn off the heat.
While veggies are simmering, skin, bone, and
dice:
1 roasted chicken
Any drippings from the container the roasted bird came
in
into the broth...not the fat, just the good tasty
stuff.
You can take the bones and tie in cheesecloth and put
into
the broth to get more flavor into the broth without
being a
mess.
Pull the cheesecloth bag out when you are ready to
assemble
the soup.
Now, I don't like the chicken to taste dry and lifeless,
so
I hold the diced chicken until I'm ready to serve. I put
the
chicken and 1/2 large bag of frozen green peas into the
broth. Bring back just to the simmer point.
Serve.
