As far as I know, iTunes does not use Quicktime to play music, but Quicktime
is required to play videos, including movies purchased from the iTunes
store.

It doesn't seem as if you will be able to do anything with any of those
options.

The only thing I can suggest is to find a way to disable QuickTime, at least
temporarily.
