In short words: you teach a midi controller like a mixer/control surface to do certain commands. Par example to control the volume or pan of a channel. This is much more comfortable with a midi controller than with the computer keyboard. But I think many control surfaces however come with good presets or don't even need such and therefore don't need this process, which is certainly very time consuming.

As long as you don't change the preset on your controller, or if you do always bring it back, that same slider or knob should work on your synth each time... Only thing is that not all synths support midi learn, but most do.
