Only thing that may go wrong is that if snapping to vertices is not selected from options then the points won't necessarily match. It would be fine it user could see somehow immediately after setting the first new vertex if the linestrings will be merged or not. Best user interface I have ever seen for extending linestrings is in the OpenStreetMap Potlatch editor. It offers also a pretty simple way to insert and drag new vertices into existing line segments, merge existing linestrings and a few more. Editor can be found at http://openstreetmap.org. It starts by pressing the Edit tab, but you need to create user account first.
