Exact same issue: UI very slow, almost impossible to scroll through mailbox, email takes several seconds to open... Nexu 5 Android 5.1.1 and K-9 Mail 5.006
I already tried 'long press' on the account, -> recreate local data, to no avail. Problem seems to be from Android 5.0 /5.1, I can't recall exactly. If nothing done, I may have to consider finding another email application...
