As Toxa said: You can disable the sync notification in Account Settings / Notifications / Sync Notifications. On my phone, this is separate from "New mail notifications". So if I check "New mail notifications" and uncheck "Sync notifications", then I see notifications of new mail, but not of the syncing process.
