Had the same problem here and found (in a closed thred on GitHub) that it has been going on for over a year now: Newer versions of Android go into such a deep sleep that they prevent K9 from polling. You do not get any notifications and when you switch on your screen, you see something like "Next poll 3 hours ago" before K9 starts downloading and suddenly goes "bling, bling, bling".
Switching off battery optimisation does not help. A recent K9 update did not solve the problem either. I did my own research and tried various things, some of which only work on a rooted device (which I do not want to do with mine). But here is a simple solution that works for me: You can install a tool called "Screen Timeout" from https://play.google.com/store/apps/details?id=de.lhoer0.screentimeout It can set your screen timout value to "Disabled". After this, you can (and should!) always switch off your screen by hand. This is a small inconvenience, but your device will no longer go into this deep sleep state and K9 works again as it used to.
