- Go to File > Render
- Pick any profile you want as a base
- Click on the "Save current preset as new custom preset"
- Select the group where you want the preset to show up in and give it a new
name (for example "Just cut")
- Click on the "Other" tab
- In the bottom section there is a button "Enable manual editing" with a
warning-sign icon. Click the button.
- If you change your mind, you can only Cancel and start from scratch
- In the text field with all the ffmpeg CLI options (keep in mind it uses a
MLT-specific notation but this doesn't matter for this use case) delete
everything that's there and enter "c=copy"
- Click on OK

You have now created a render profile/preset that instructs ffmpeg to just copy
the streams without re-encoding. In my case it produced a cut video I could
play back but since this was a short clip I don't know whether the render speed
was significantly reduced.
