I'll just list down some of the highlights of the two version.

VMware workstation (non-free use)
- You can make clone of existing VM
- You can make unlimited and multiple snapshots(by date) of the existing VM.
- you can clone snapshot and make it a regular VM or link only with
the existing snapshots (saves you diskspace and time of bootstrapping
a new VM)

- by snapshots means
+you can save the previous state of your OS, and revert or forward to
your desired state (good for debugging)

Good example of state/snapshot :
+state1(you installed apache)
+state2(patched apache)
+- oops apache crashed! hmmm ok revert to state1

VMware server (free)
- you cannot clone a snaphot (although you can copy the folder
physical and save it as another name)
- you can only make 1 snapshot
- with web administration, remote login/administration
- probably lots of other advantages (i don't know) but snapshot
feature is the highlight of the "workstation" version.
