I think we can use Git. And our current version is 3.05.00.011 We’d love to jump straight to 3.4.5 (the system can be offline for hours – we could run it overnight, etc.)

Tarball or Git? This will inform the best upgrade method for you. When you say you're on Koha 3.05, do you mean 3.00.05, or 3.05.00? The former is the now obsolete Koha 3.0 line, while the latter is the dev version for Koha 3.6 (which would indicate to me you have a Git install) Whatever your installation type and path, you won't need to install each intermediate version; you can jump straight from Koha 3.0.5 to Koha 3.4.5 if you wish, though it will take a fair amount of time to process all the updates.
