I would guess it requires more than just a flat surface. More like a flat /steady/ surface, and an unobstructed view of the projector.

As for useful for instrumentation, I suppose. But instrumentation is just the application space for touchscreens and membrane type interfaces. I just think that an interface which requires a laser is a bit overkill for all but a very few niche applications.
