First, you're comparing a PCI Express card with a PCI-X one. On that alone I'd choose the 3Ware, assuming you have the slot for it.
But all things being equal, I've had exceptional luck with 3Ware's products under Linux and recommend them without hesitation. Their drivers are maintained as part of the kernel so there's no driver funny business to deal with on installs or kernel upgrades. This *may* also be the case with the Adaptec, it's hard to tell from their site. They do appear to provide the source code as DKMS packages (http://linux.dell.com/projects.shtml), which work but are more trouble than having it provided in your vendor kernel.
