Squirrelmail uses your local IMAP server. It's not in charge of reading the mail from the disk. So you need an IMAP server that reads Maildir - Courier or Dovecot.

Also, I created a new user but Squirrelmail/Courier doesn't seem to let that
new user login for some reason.

First see if you can log in to Courier using a regular IMAP client on port 143. If not, then check to see if the auth daemon is running... it's been a while since I used Courier, but I'm pretty sure they broke out authentication into a separate daemon and it needs to be configured to use PAM, LDAP, etc.

Once you have native IMAP working, then run Squirrelmail's setup Perl script and pick the pre-sets for Courier. You should be able to log in. If not, check the Courier logs to see what's up.
