I have never used Gentoo, but my impression is Not A Lot. Other than the
USE FLAGS thing, which Debian seems to not have anything like.
The USE FLAGS can help automate compile-time options. It reduces the
amount of researching you have to do to get all the compile-time
options you might want. But I agree, it's a minor benefit.
One of the nice things I liked about the gentoo package (an ebuild) is
that it's nothing other than a simple shell script. Although I've
never actually created my own ebuild (any software I've ever wanted
has always already been packaged by someone better suited than me),
many times I would scan the script and see what the package maintainer
was doing. Basically, the ebuild package strikes me as the most open
and simple kind of package you can get.
