Both. They have different attributes. Each has its uses.

And if I feel I need more privacy I may use a variety of extended services,
e.g. a bonded private courier service, etc.

But many people still transmit legal documents for signature by
physical mail of various forms.

This has nothing to do with whether or not a particular form of email
service is or is not secure. One must always expect that the "Powers
That Be" will want more power and try by hook or crook to get it.

I should _not_ waste my efforts caring about those things that do
not matter though, such as the absolute fact that many forms of
email are inherently insecure. If I care about my security I will have
alternatives to the insecure methods.

Even a brief survey of the history of spycraft will provide you with
many ways of sustaining secure communications in the face of
very real oppression.
