Do you already have a version of the ATI proprietary drivers installed? If so, try running the Catalyst program and see if you can specify Dual Head anywhere. Otherwise, the newest version of Catalyst definitely as that option... though you might have some issues with getting OpenOffice to run with the latest fglrx.
