I've got 2 NVidia cards up, and am looking to plug in another 3 Matrox
cards (I only have PCIe slots left, and they're about the only ones to
make PCIe 1x cards) to give me 5 seats.

Doesn't Matrox make dual-display cards?

Yes, though there hasn't been much success in treating them as individual displays for separate instances of X. Most ppl use them to create a super-monitor
