I'll tell you what I was told over on the Pietenpol list about cable.  For 
cable running over pulleys (control cable), don't use stainless.  It's not 
as flexible as galvanized.  Also, galvanized tends to fail one strand at a 
time and is easier to inspect for failures for that reason.  I believe it is 
also assembled using some sort of coating that helps cut down on friction 
between the individual strands.

For "standing wires" such as braces, especially since they are exposed to 
the elements constantly, stainless might be preferred.

Boy, I sure am glad we're not talking about prop extensions here (inside 
humor).
