One thing I noticed on my Midget Mustang when I wrapped the exhaust (and I assume you would see the same thing with ceramic coting) is that it was much easier to find peak EGT. The temp gauge moved a lot faster without the normal lag. I guess that is because you are insulating the exhaust gas you are measuring from the outside air that is cooling it.
