If what you are talking about are the low-height nuts at

I wouldn't think that would be suitable, especially with nylon inserts. I have always used all-steel lock nuts, AN 363, to be exact.

That and AN bolts, as you said. Some will advocated regular castle nuts with safety wire, but my approach is that with wooden props, which should be retorqued a few hours after installation, and at least twice a year with the season change, you're less likely to follow through if it involves a half hour of safety wiring.
