You've already found the simple program running under Windows that you're looking for..
Hyperterminal lets you capture and log data. All you need to do is click on "Transfer" 
in the Hyperterminal tool bar, then you have a choice of
capturing the input data to a file, (Capture Text...) or else sending it to a printer 
(Capture to Printer). After you initiate it, you can then
minimize Hyperterminal to and let it run in the background.
