G'day All,
I received a gorgeous hamper of left over Christmas food yesterday and 
amongst it was this small container of something I'd neither seen nor 
tasted the like of before. I got the recipe tonight from the woman who gave 
it to me and have typed it out here for you all to enjoy.

Summer Salad

 From the Ladies Auxilliary of Peplow House, Ballarat
A Homeless Men's Shelter
25 Dec 2003.

Ingredients:-
-       1 packet of lemon jelly
-       1 teaspoon of gelatin
-       middle sized can of crushed pineapple
-       1 cup of juice from pineapple
-       1 cup of finely grated carrot
-       1 cup of hot water
-       2 tablespoons of vinegar
-       pinch of salt
-       small handful of chopped mint
-       (optional) 1 cup of cooked peas

Method:
-       dissolve jelly and gelatin in the hot water
-       add the juice from the can of pineapple, making it up to 1 cup with 
more hot water
-       add the rest of the ingredients
-       stir well
-       pour into a wet mould
-       place in refrigerator for a few hours to set
