Either, whichever is more convenient. If you carry your knitting around, then obviously balls will be more convenient, wound off 3 disks at once. If you don't want to bother winding balls and portability isn't an issue (and you don't have cats!), then you can put the disks on the floor and knit from them without winding off into balls. You "ply" this yarn by knitting the strands held together. There is no need to put twist in with a spindle or wheel. Icelandic yarn has a fairly long staple and will hold together just fine, even though it's unspun. Enjoy!
