Very many thanks to those who answered my query. And especially to Avital for identifying my disks as cheeses! And the website was very interesting too. Evidently it would be illegal to sell such cheeses in the EU these days, and its so nice to think there are still places which are free from such ridiculous regulations.
Anyway, gaining confidence from your messages I am knitting the plys together as I go and so far (well, all 2" of it!) it looks fine.
