Another point to consider is the amount of shrinkage when the pins come out.
I know from experience that the coarser the thread and the further apart the pins are the greater that shrinkage will be and the lace in these these hats is fairly open. Torchon in mixed yarns worked on a 5mm grid (10mm between footedge pins) has about 10% shrinkage. Working in 100% linen, which is what I'd guess she is using, will probably shrink less but even so it would make the finished hat a size smaller than the felt hat/pillow.
